Pumpcorn? Pumpkin Spice Caramel Popcorn

This really doesn’t need any introduction. It’s just worth making…again…and again…and again…

Pumpkin Spice Caramel Popcorn

Large bowl of (popped) popcorn

1/2 cup of butter

1 cup of brown sugar

1/4 cup of corn syrup

1/2 teaspoon salt

1/2 teaspoon baking soda

1 teaspoon of vanilla extract

1 heaping tablespoon of pumpkin pie spice

Make a big bowl of popcorn. Not the microwave chemical stuff! Put the popcorn in a large baking or casserole dish.

Preheat oven to 250 degrees Fahrenheit.

Combine the butter, sugar, corn syrup (light or dark) and salt in a small pot on the stove. Stir it while it melts and turn off the heat.

Add in the baking soda and vanilla extract.

Pour the caramel mixture all over the popcorn and toss it around as best you can. Put it in the oven and toss every 15 minutes. After an hour, remove from the oven and toss in the pumpkin pie spice while it is all still gooey and warm.
